I like to buy the medium tomato and green chili’s for extra spice or add a jalapeno to the rice. If you are sensitive to spice then be sure to buy mild tomato and green chili’s.

  1. Preheat oven to 375°.
  2. Bake covered for 30 minutes.
  3. Uncover and stir in cheese. Bake uncovered for 15 minutes.
  4. Check to see if the rice is tender if not bake for additional 5 minutes or until rice is tender. Enjoy!
