Speedy Spanish Rice

Speedy Spanish Rice is great for taco night because it comes together so quickly. The cilantro gives the green pepper rice a nice pop of flavor.

Speedy Spanish Rice is simple, fast and good. I have a few rice sides I turn to when I am making Mexican dishes and this is one of them. It doesn’t really matter what color pepper you use. Sometimes I like to add a little jalapeno for spice.

  1. Complete prep from prep tab above.
  2. In a large nonstick skillet melt butter on medium low heat and sauté the rice, onion and green pepper until the vegetables are crisp tender 4-5 minutes.
  3. Add the garlic and cook for 1 minute.
  4. Stir in the water, cilantro, cumin, bouillon and pepper then bring to a boil.
  5. Reduce heat; cover and simmer for 5 minutes.
  6. Remove from heat and let stand for 5 minutes.
  7. Stir in picante sauce.
