Grilled Blackened Chicken

This blackened chicken is full of flavor. Once you get the grill temperature where you need it to be the flavors just meld together as they cook.

Grilled blackened chicken is really tasty, with bold flavors of spice such as cayenne and smoked paprika. I am a huge fan of grilling split chicken breasts because they always turn out tender and juicy. You can also make this recipe with bone in chicken thighs or drumsticks.

I am not a huge fan of buying the pre-blended spice mixes because we already have the spices we need to create them. If I bought a new spice blend every time I wanted to makes something my spice rack would be out of control.

Grill It!

Serving size:

  • 1/2 split chicken breast

Total time: 45 minutes

I am assuming you have salt and pepper and do not add it into the recipe total cost.

Let's prep!

Pantry & Spices

  • cayenne pepper
  • garlic powder
  • onion powder
  • dried oregano
  • paprika
  • smoked paprika
  • dried thyme

Grocery

  • 1 - package split chicken breasts

Tip from me

The blackened chicken seasoning is going to make a lot of seasoning. You will use a little for this recipe and then save the rest for a later use. I bought spice jars to label and store my homemade spice blends. 

Let's cook!

  1. Complete the prep from the prep tab above.
  2. Heat grill to 350° F
  3. Place chicken breasts skin side up over indirect heat for 45 minutes. 
  4. Using a instant read thermometer check to see if chicken is 165° F if it is not continue to cook until this temperature is reached.
  5. Let rest for 10 minutes. Enjoy!
