Zucchini Turkey Skillet

Zucchini Turkey Skillet is one skillet packed with proteins and flavor such as beans, spicy sausage, basil, oregano and balsamic vinegar.

Zucchini Turkey Skillet is perfect for when you want a stuffed zucchini but don’t want the hassle of stuffing a zucchini. Get creative and change out the beans and herbs. I changed out the black beans for chick peas pictured above and it was delicious. Recipes are only suggestions. Cook to your taste! 

If you don’t like spice then instead of hot Italian sausage buy mild. I like a lot of spice so I tend to add red pepper flakes as well as spicy Italian Sausage.

Recipes are only suggestions. I cook with what I have to keep the cost down low. You can change out the beans to whatever beans you like. If you don’t like beans then leave them out and add peppers. The variations are endless!

  1. Complete the prep from the prep tab above.
  2. Heat 1 tablespoon of olive oil in a deep pan. 
  3. Add the turkey sausage and the bowl of vegetables to the pan breaking the turkey into small pieces. Cook until the turkey is cooked through. This takes about 8 – 10 minutes.
  4. Add the garlic for 1 minute.
  5. Add and cook for 3 -5 minutes:
    • black beans
    • 1 can tomatoes
    • 1 tablespoon balsamic vinegar
  6. Spoon into 6 equal servings. Enjoy!
