Tomato, Spinach and Butter Beans is a fast and filling vegetarian dish. Butter beans are large and nutrient packed. This recipe is the first time I have ever tired them and I was super happy I did. Sometimes butter beans are hard to find but you can substitute with your favorite bean.
If you are not a pasta fan substitute the pasta for a grain such as rice, bulgur, quinoa farro, etc. My favorite subsitution in this dish is farro. Here is a tip for the subsitution. Once the cooking time for the farro (or other grain) has reached 10 minutes remaining start the bean dish. Stir in the farro (or other grain) into the bean dish for a one pot meal.
If you have dietary restrictions for no oil this recipe is still easy. Set your oven to 350 degrees and in a small oven safe bowl add 1/2 cup vegetable broth, 1 whole onion unpeeled, 2 garlic cloves unpeeled. Bake for 40 minutes.
I like to let the onion cool on a plate for 20 minutes before peeling and chopping the onion and garlic.
For the recipe, skip the saute step and just add the garlic and onions with the beans and tomato.

Let's prep!
1 tablespoon olive oil |

1 can petite diced tomato 28 oz |

6 ounces fresh spinach |
1/2 teaspoon Italian seasoning |
1/2 teaspoon pepper |
8 oz shell pasta |
1/4 cup grated parmesan cheese |
- Gather all of the ingredients and measuring tools
- Mince 2 garlic cloves; set aside
- Rinse butter beans in a colander; set aside.
- Dice 1 onion; set aside
Let's cook!
- Complete the prep from the prep tab above.
- Bring pot of water to boil. Cook 8 oz pasta to package directions.
- In a sauté pan heat oil over medium heat then add onion for 4 – 5 minutes until tender.
- Add garlic and cook for 1 minute.
- Add:
- Butter beans
- Tomatoes
- 6 cups of spinach (6 oz)
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon black pepper
- Cook 2 – 4 minutes until spinach is wilted.
- Serve tomato bean mixture over pasta with grated parmesan cheese. Enjoy!

Side Options
Soup is a great option as well!
You can make any soup vegetarian by using vegetarian broth and omitting the meat. I like to add more vegetables, tofu or grains. Southwest chicken soup is great with bulgur and garbanzo beans instead of chicken.
