There is something truly addicting about the combination of pesto and lemon. I originally found this recipe in my Taste of Home cookbook but it is also available online.

|1 pound boneless chicken thighs|
|1 teaspoon lemon pepper|
|2 teaspoons olive oil|
|1 can reduced sodium chicken brtoh|
|2 tablespoons lemon juice|
|1 cup spiral pasta|
|2 cups fresh broccoli florets|
|1 cup forzen peas|
|1/3 cup pesto|
- Heat 2 teaspoons of olive oil in a pan then sauté chicken until it reaches an internal temperature of 165° F. Remove chicken and keep warm.
- Add chicken broth mixture to pan and bring to a boil stirring in browned bits. Add 1 cup uncooked pasta, reduce heat to a simmer and place a lid on the pan for about 8 – 10 minutes.
- Stir in the broccoli and peas and continue to cook for 3 minutes.
- Stir in the pesto. Enjoy!
