I love recipes that are quick and easy on my wallet. I am not a fan of instant rice so I usually make long grain using our instant pot.
A great time saving tip if you have an instant pot is to make a large batch of rice and then freeze it in portions that are right for your family.
I originally found this recipe in my taste of home cookbook but you can also find it online. I added an onion but you could leave it out if you want.

1 pound ground beef $5.37
1 box instant rice $2.88
1 can black beans $0.78
1 can diced tomatoes and mild green chilies $0.88
1 bag frozen corn $0.88
|1 pound ground beef|
|1 can black beans, rinsed and drained|
|1 can diced tomatoes with mild green chilies, undrained|
|1 ~ 1/3 cup frozen corn|
|1 cup water|
|1/2 teaspoon salt|
|1/2 teaspoon pepper|
|1 ~ 1/2 cups instant brown rice|
|1 garlic clove|
- Heat skillet over medium high heat then add:
- ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Continue to cook until the beef is brown, drain if needed, then add 1 garlic clove and frozen corn for 2 ~ 3 minutes.
- Add and return to a boil:
- diced tomatoes and green chilies
- Reduce heat to simmer, cover and continue to cook for 5 minutes.
- Remove from the heat and let sit for 5 minutes. Enjoy!
