Beef Beans and Rice

Beef Beans and Rice is a one pot meal full of fiber and vegetables. It is a complete dish in one bowl. I like to serve a spinach salad on the side.

Beef Beans and Rice is a quick recipe that is also easy on my wallet. This dish is full of nutrient enriched foods. You can make this dish with any ground meat you prefer. I love that it is a one pot meal with very little prep. 

If you only have 30 minutes you can easily get this dish on your table to ensure your family has a nice home cooked meal. A nice variation to the frozen corn would be a bag of frozen peas, carrots and corn. Beef Beans and rice is so easily adaptable to any tastes. 

I originally found this recipe in my Taste of Home Healthy Cooking 2012 Annual Recipes Cookbook. I added onion and garlic to add more flavor to the meat. You can also top it with parmesan cheese or add a little hot sauce.

Serving size: 1 ~ 1/4 cups

Let's grocery shop!

I am assuming you have salt and pepper. It is not included in pantry and spices.

Grocery

  • 1 garlic clove
  • 1 onion
  • 1 pound ground beef
  • 1 box instant rice
  • 1 can black beans
  • 1 can diced tomatoes and mild green chilies
  • 1 bag frozen corn

Tip from me

Fresh herbs are a great addition as you plate this dish. I prefer to add cilantro or flat leaf parsley. You can also add other spices such as cumin, smoked paprika, chili powder etc. This dish can be modified in so many splendid ways. 

Let's prep!

Let's cook!

  1. Complete prep from the prep tab above.
  2. Heat skillet over medium high heat then add:
    • ground beef
    • onion
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
  3. Continue to cook until the beef is brown, drain if needed, then add 1 garlic clove and frozen corn for 2 ~ 3 minutes. 
  4. Add and return to a boil:
    • beans
    • diced tomatoes and green chilies
    • water
    • rice
  5. Reduce heat to simmer, cover and continue to cook for 5 minutes. 
  6. Remove from the heat and let sit for 5 minutes. Enjoy!
