Beef Beans and Rice

I love recipes that are quick and easy on my wallet. I am not a fan of instant rice so I usually make long grain using our instant pot. 

A great time saving tip if you have an instant pot is to make a large batch of rice and then freeze it in portions that are right for your family. 

I originally found this recipe in my taste of home cookbook but you can also find it online. I added an onion but you could leave it out if you want.

I am assuming you have salt and pepper and do not add it into the recipe total cost.

Serving size: 1 ~ 1/4 cups

Equipment needed: Deep pot or Dutch Oven

  • 1 garlic clove $0.67
  • 1 onion $0.78
  • 1 pound ground beef $5.37
  • 1 box instant rice $2.88
  • 1 can black beans $0.78
  • 1 can diced tomatoes and mild green chilies $0.88
  • 1 bag frozen corn $0.88

Let's prep!

Let's cook!

  1. Heat skillet over medium high heat then add:
    • ground beef
    • onion
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
  2. Continue to cook until the beef is brown, drain if needed, then add 1 garlic clove and frozen corn for 2 ~ 3 minutes. 
  3. Add and return to a boil:
    • beans
    • diced tomatoes and green chilies
    • water
    • rice
  4. Reduce heat to simmer, cover and continue to cook for 5 minutes. 
  5. Remove from the heat and let sit for 5 minutes. Enjoy!
