Bean Stacked Tortilla Bake

This is a flavorful filling dish that will feed a lot of people for not a lot of money. You can use either corn or flour tortillas what ever you prefer. I first found this recipe in my Taste of Home Cookbook you can also find it online.

  • 1 medium onion $0.60

  • 1 package tortillas 8" $1.98
  • sour cream $1.16
  • 1 bag Mexican cheese 8 oz $2.22
  • 1 head of lettuce $1.74
  • 1 medium tomato $0.91
  • 1 bunch cilantro $0.88

Let's prep!

Let's cook!

  1. Preheat oven to 400° F.
  2. Heat a large skillet and sauté beef and onion breaking up into small pieces until the beef is cooked. 
  3. Drain the beef then add the bowl of bean mixture to the beef until combined. Remove from heat. 
  4. In a casserole dish layer:
    • 3 tortillas
    • 1/2 the meat mixture
    • 3 ~ 1/8 cups of sour cream spread evenly
    • 1/4 cup (2 oz) shredded cheese spread evenly
    • 3 tortillas
    • the other 1/2 of the meat mixture
    • 3 ~ 1/8 cups of sour cream spread evenly
    • 1/4 cup (2 oz) shredded cheese spread evenly
  5. Cover and bake for 25 minutes. 
  6. Uncover and bake for 5 – 10 minutes.
  7. Top dish with lettuce, tomato and cilantro. Enjoy!
