Bean Stacked Tortilla Bake is full of flavor and is a great Mexican night meal! It makes a wonderful lunch or dinner.

Bean Stacked Tortilla Bake is a flavorful and filling dish that will feed a lot of people for not a lot of money. You can use either corn or flour tortillas what ever you prefer. I first found this recipe in my Taste of Home Healthy Cooking 2010 Annual Recipes Cookbook.

  1. Complete the prep from the prep tab above.
  2. Preheat oven to 400° F.
  3. Heat a large skillet and sauté beef and onion breaking up into small pieces until the beef is cooked. 
  4. Drain the beef then add the bowl of bean mixture to the beef until combined. Remove from heat. 
  5. In a casserole dish layer:
    • 3 tortillas
    • 1/2 the meat mixture
    • 3 ~ 1/8 cups of sour cream spread evenly
    • 1/4 cup (2 oz) shredded cheese spread evenly
    • 3 tortillas
    • the other 1/2 of the meat mixture
    • 3 ~ 1/8 cups of sour cream spread evenly
    • 1/4 cup (2 oz) shredded cheese spread evenly
  6. Cover and bake for 25 minutes. 
  7. Uncover and bake for 5 – 10 minutes.
  8. Top dish with lettuce, tomato and cilantro. Enjoy!
