Bean Stacked Tortilla Bake is a flavorful and filling dish that will feed a lot of people for not a lot of money. You can use either corn or flour tortillas what ever you prefer. I first found this recipe in my Taste of Home Healthy Cooking 2010 Annual Recipes Cookbook.

Let's prep!
1 pound ground beef |
1 large onion |
2 cups salsa |
1 can black beans 14.5 oz. |
1/4 cup Italian salad dressing |
2 tablespoons taco seasoning |
1/2 teaspoon ground cumin |
6 flour tortillas 8 inches |
3/4 cup sour cream |
1 cup Mexican cheese 4 oz |
1 cup lettuce |
1 medium tomato, chopped |
1/4 cup minced fresh cilantro |
- Gather all of your ingredients and measuring tools
- Chop one large onion and place in a bowl; set aside.
- In a large bowl add and mix well:
- 2 cups salsa
- 1 can black beans, rinsed
- 1/4 cup Italian salad dressing
- 2 tablespoons taco seasoning
- 1/2 teaspoon ground cumin
- Chop lettuce and place in a medium bowl; set aside.
- Chop tomato and place in a small bowl; set aside.
- Chop 1/4 cup cilantro and place in a small prep bowl.
Let's cook!
- Complete the prep from the prep tab above.
- Preheat oven to 400° F.
- Heat a large skillet and sauté beef and onion breaking up into small pieces until the beef is cooked.
- Drain the beef then add the bowl of bean mixture to the beef until combined. Remove from heat.
- In a casserole dish layer:
- 3 tortillas
- 1/2 the meat mixture
- 3 ~ 1/8 cups of sour cream spread evenly
- 1/4 cup (2 oz) shredded cheese spread evenly
- 3 tortillas
- the other 1/2 of the meat mixture
- 3 ~ 1/8 cups of sour cream spread evenly
- 1/4 cup (2 oz) shredded cheese spread evenly
- Cover and bake for 25 minutes.
- Uncover and bake for 5 – 10 minutes.
- Top dish with lettuce, tomato and cilantro. Enjoy!
