I like to make Spicy Goulash with Beans because less meat is needed to round out the dish. Beans are so good for you and I try to cook with them multiple times a week. If you are looking for an alternative to your chili party I highly recommend Spicy Goulash with Beans.
I originally found this recipe in my Taste of Home Healthy Cooking 2011 Annual Recipes Cookbook. I altered it a little to add more tomatoes and less spice.

1 pound lean ground beef |
3 cans tomato and green chili |
1 can diced tomato |
2 cans kidney beans |
2 cups water |
1 medium onion; diced |
1 medium pepper; diced |
1/4 cup red wine vinegar |
2 tablespoons chili powder |
1 tablespoon worcestershire sauce |
2 teaspoons beef bouillon granules |
1 teaspoon dried basil |
1 teaspoon dried parsley |
1 teaspoon ground cumin |
1/4 teaspoon pepper |
2 cups uncooked elbow macaroni |
- Gather all of your ingredients and measuring tools
- Chop 1 onion then place in crock-pot
- Chop 1 green pepper then place in crock-pot
- Add the following to the crock-pot:
- diced tomatoes & green chili’s
- diced tomatoes
- 2 cups water
- 1/4 cup red wine vinegar
- 2 tablespoons chili powder
- 1 tablespoon worcestershire sauce
- 2 teaspoons beef bouillon granules
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
Let's cook!
- Complete the prep from the prep tab above.
- Add all ingredients except beef and elbow macaroni.
- Sprinkle the meat with salt and pepper. Heat the pan then brown the meat in a skillet breaking into small pieces; drain the drippings and add the beef to the crock-pot.
- Stir to combine.
- Place crock-pot on low for 5-6 hours
- Add 2 cups of uncooked elbow macaroni; cover and continue to cook for 30 minutes or until macaroni is cooked. Enjoy!
