Bean Stacked Tortilla Bake

Bean Stacked Tortilla Bake is full of flavor and is a great Mexican night meal! It makes a wonderful lunch or dinner.

Bean Stacked Tortilla Bake is a flavorful and filling dish that will feed a lot of people for not a lot of money. You can use either corn or flour tortillas what ever you prefer. I first found this recipe in my Taste of Home Healthy Cooking 2010 Annual Recipes Cookbook.

Beans with beef make this a meal that will fill you up. The lettuce, tomato and cilantro on top add a nice freshness to the dish. I like to spice this dish up a little by adding hot salsa.
