Strawberry Walnut Salad and Vinaigrette is the perfect summer salad when strawberries are at their peak. You can interchange any nut you like in this salad. I like to buy nuts when they are on sale and freeze them in 1 cup portions.
I do not like goat cheese so I tend to leave that off or substitute it for fresh mozzarella.
I found this recipe in my Taste of Home Healthy Cooking 2012 Annual Recipes Cookbook.

Let's prep!
1 pound chicken tenderloins |
1/4 cup white wine vinegar |
1 pound fresh strawberries |
2 tablespoons lime juice |
2 tablespoons fresh mint, chopped |
2 tablespoons honey |
1 teaspoon salt, divided |
1 teaspoon pepper, divided |
3 tablespoons olive oil, divided |
5 oz mixed salad greens |
1 small red onion, sliced |
4 oz goat cheese |
1/4 cup chopped walnuts |
- Gather all of your ingredients and measuring tools
- Rinse and hull all the strawberries.
- set 4 strawberries to the side
- slice the rest of the strawberries.
- Slice the red onion thinly
- Corsley chop 2 tablespoons mint (about 4 ~ 6 leaves)
- Prepare the dressing in a food processor or blender:
- 1/4 cup white wine vinegar
- 4 strawberries
- 2 tablespoons of water
- 2 tablespoons of lime juice
- mint leaves
- 2 tablespoons of honey
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Blend until smooth.
- Slowly add 2 tablespoons of olive oil while the motor is still running.
- Place in refrigerator.
- Season both sides of the chicken with 3/4 teaspoon of salt and 3/4 teaspoon of pepper.
Let's cook!
- Complete prep from prep tab above.
- Place the fry pan with 1 tablespoon of olive oil on medium heat.
- Sauté chicken tenders for 3-4 minutes per side until the chicken reaches 165° F.
- Let the chicken rest for 5 – 10 minutes
- Add to the salad bowl:
- 5 oz greens
- sliced strawberries
- sliced onion
- 4 oz goat cheese broken into chunks
- 1/4 cup chopped walnuts
- Measure 1.75 cups of salad, 4 ounces of chicken and top with 2 tablespoons of dressing per plate. Enjoy!
