Chili over Noodles

Chili over Noodles is the best accident my family has come across. It is a complete meal in one bowl.

Chili over Noodles was discovered by my family when my dad accidently made the chili too salty. We boiled up noodles and placed the salty chili over top and it was perfect. By adding the noodles a pot of chili will last longer and becomes a great freezer meal. 

We freeze chili and other foods in 1 cup ice cube trays. I highly recommend making a large pot of chili and freezing some so you have a quick meal when there is no time to cook. Check out our article on freezing food using ice cube trays for more freezer friendly meals.

  1. Complete the prep from the prep tab above.
  2. In a Dutch oven heat 1.5 teaspoons of olive oil.
  3. Sauté vegetables until tender.
  4. Add garlic for 1 minute
  5. Add and bring to boil:
    • Seasonings
    • diced tomatoes
    • tomato sauce
    • tomato paste
    • red beans
  6. Reduce heat to medium low stirring occasionally for 20 minutes. 
  7. Bring a pot of water to boil and cook 8 ounces of pasta to package directions. 
  8. Serve chili over pasta with sour cream. Enjoy!
