Bean and Bulgur Chili

For a long time I was on a high fiber diet and this opened my eyes to different types of grains that I had never eaten before such as “bulgur”. This chili is wonderful and if you have not had bulgur before please try this recipe. I originally found it my taste of home cookbook but you can find it online.

I am assuming you have salt and pepper and do not add it into the recipe total cost.

  • 1 bag bulgur $4.09
  • 1 sour cream 8 oz $1.16

  1. Place the Dutch oven on medium low heat with 4 teaspoons of olive oil. 
  2. Sauté the green pepper mixture until tender. 
  3. Add the garlic for 1 minute.
  4. Add the carrot and seasonings and stir for 1 minute. 
  5. Add and stir well:
    • diced tomatoes
    • fire roasted tomatoes
    • kidney beans
    • pinto beans
    • black beans
    • vegetable broth
    • 1/3 cup tomato paste
  6. Bring to a boil then reduce the heat and simmer for about 30 minutes. 
  7. While the bean mixture is simmering cook the bulgur to package directions. 
  8. Stir the bulgur into the chili. Enjoy!
