Black Olive and Bell Pepper Pasta

If I have extra vegetables in the refrigerator I add them to this dish. I like to add green beans, squash, spinach, tomatoes, roasted vegetables, etc. If I don’t have black olives I use whatever olives I have on hand. 

Another great thing to add is beans. Andrew and I like chick peas they add a lot of protein and fiber. This also extends the recipe to 6 servings. 

I have a collection of taste of home cook books and really enjoyed this simple recipe. You can also find it on the Taste of Home web site.

Equipment needed: 1 pot for pasta and 1 deep sauté pan.

  • 1 box penne pasta 16 oz $0.98

  • 1 bulb garlic $0.67
  • 1 sweet pepper $1.38
  • 1 green pepper $0.82
  • 1 can ripe olives $1.66
  • 1 tub feta cheese $2.88

  1. Put on a pot of water to boil for pasta. Add salt and cook pasta to al dente.

  2. While the pasta is cooking heat 1 tablespoon of olive oil in a deep skillet.

  3. Add peppers and onion for 3 – 5 minutes until onions are soft. 

  4. Add garlic for 1 minute

  5. Add and stir well: 

    • olives

    • spices

    • 1/4 cup pasta water 

  6. Bring to a boil for 2 minutes then using a spider strainer remove pasta from boiling water and add it to the pepper mixture. 
  7. Turn off heat and stir in cheese. Enjoy!
