Black Olive and Bell Pepper Pasta

Black Olive and Bell Pepper Pasta is a very simple recipe that works with a variety of different vegetables.

Black Olive and Bell Pepper Pasta is very versitile. If I have extra vegetables in the refrigerator I add them to this dish. I like to add green beans, squash, spinach, tomatoes, roasted vegetables, etc. If I don’t have black olives I use whatever olives I have on hand. 

Another great thing to add is beans. Andrew and I like chick peas they add a lot of protein and fiber. This also extends the recipe to 6 servings. 

I found this recipe in my Taste of Home Light and Tasty 2005 Annual Recipes Cookbook.

  1. Complete prep from prep tab above.
  2. Put on a pot of water to boil for pasta. Add salt and cook pasta to al dente.

  3. While the pasta is cooking heat 1 tablespoon of olive oil in a deep skillet.

  4. Add peppers and onion for 3 – 5 minutes until onions are soft. 

  5. Add garlic for 1 minute

  6. Add and stir well: 

    • olives

    • spices

    • 1/4 cup pasta water 

  7. Bring to a boil for 2 minutes then using a spider strainer remove pasta from boiling water and add it to the pepper mixture. 
  8. Turn off heat and stir in cheese. Enjoy!
