Beefy Tomato Rice Skillet is a very quick dish that will fill up your family and not break the bank.

Beefy Tomato Rice Skillet is a very quick fix on a busy weeknight. I find it really hard to follow recipes and this recipe is a perfect example of that. Orginally this recipe called for condensed tomato soup and I substituted crushed tomatoes for a fresher flavor.

Let's grocery shop!

I am assuming you have salt and pepper. It is not included in pantry and spices. 

Pantry & Spices

  • Italian Seasoning
  • red pepper flakes

Grocery

  • 1 - pound ground beef
  • 1 - medium onion
  • 1 - garlic bulb
  • 1 - celery stalk
  • 1 - green pepper
  • 1 - can kernel corn
  • 1 - can crushed tomatoes
  • 1 - box instant rice

Tip from Me!

As you are cooking taste for acid. If you find this dish too acidy (sour) add some sugar 1/4 teaspoon at a time. Add a little sugar let it cook for 2 minutes then taste again. If it is still too acidic then add more sugar. Eventually you will find a good balance for your liking.

  1. Complete the prep from the prep tab above.
  2. In a large skillet over medium high heat add:
    • 1 pound ground beef
    • celery, onion, and green pepper
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/4 teaspoon red pepper flakes
  3. Cook the beef and vegetables until the beef is brown and the vegetables are tender
  4. Add the garlic and cook for one minute
  5. Add:
    • corn
    • crushed tomatoes
    • 1 cup of water to the empty tomato can/jar then swish around and empty into the beef vegetable mixture
    • 1 teaspoon Italian seasoning
  6. Bring to a boil and taste for seasoning. This is where you adjust salt, pepper or add sugar if it is too acidic.
  7. Stir in 1 cup of rice, cover and let stand for 10 minutes. Enjoy!
