Over Easy Eggs with Vegetables

Over easy eggs are fast and a delicious way to start your day. I make them a few times a week and top them with different vegetables and herbs.

Over easy eggs are a quick way to get a healthy breakfast on the table. I like to change them up by adding different sides such as potatoes, meat, vegetables, sourcrout and herbs. They are so versatile, your imagination is waiting!

Eggs have all nine essential amino acids building blocks for high quality protein. Eggs have more nutrients, vitamins, minerals, amino acids, per calorie than most other foods. They include: selenium, phosphorus, choline, Vitamin B12, antioxidants.

Vegetables to accompany eggs can be cooked a variety of ways such as steamed, roasted, sautéed, microwaved, etc. before adding them to eggs. Sometimes I add pickled or raw vegetables such as spinach depending on what I have on hand. 

How to make Over Easy Eggs

  • Melt 1 teaspoon butter/oil/bacon grease/Other into a warm pan 
  • Crack your egg into the center of the pan.
  • Once the egg is set on the bottom (the clear is now white), take a spatula and gently flip the egg over. 
  • Continue to cook for a few minutes until desired doneness.

Toppings for Over Easy Eggs

  • Fresh herbs such as chives, flat leaf parsley, oregano, etc.
  • Fresh tomato
  • Leafy greens such as spinach, arugula, micro greens, etc
  • Pickled vegetables such as jalapeno, onion, zucchini, etc
  • Olives 
  • Salsa
  • Hot Sauce

Over Easy Egg Combinations

Bacon and Potato

Serving Size 1

  • Dice a cooked potato
  • Cook 1/2 slice bacon turning until desired doneness.
  • Using a paper towel remove excess grease leaving about a tablespoon. 
  • Cook potatoes in the grease until they are brown and place on a plate
  • Cook your egg and serve! 
Chicken Sausage and Oat Toast

Serving Size 1

  • Cook 2 oz chicken sausage until temp reaches 165F and place on a plate
  • Cook your egg
  • Make your toast
Bacon and Toast

Serving Size 1

  • Cook 1/2 slice bacon turning until desired doneness.
  • Using a paper towel remove excess grease leaving about a tablespoon. 
  • Cook your egg in the grease
  • Make your toast 
Pork Sausage and Toast

Serving Size 1

  • Cook 2 oz pork sausage until temp reaches 165F and place on a plate
  • Cook your egg
  • Make your toast
  • Top with salsa
Red Pepper, Onion and Salsa

Serving Size 1

  • Dice 1/4 onion and 1/4 red pepper
  • Heat 1 teaspoon butter/oil/bacon grease/other in a warm pan
  • Sauté the vegetables until tender.
  • Make a hole in the center of your vegetables.
  • Crack your egg in the center. 
  • Cook until the egg is set and flip. Then continue to cook until desired doneness.
  • Add cheese
  • Make your toast
  • Top with salsa
